Marty’s Bread recipe
Ingredients:
2 cups of hard white bread flour
1/2 cup rye flour
1/2 cup of spelt flour
2 1/4 tsp dry active yeast
2 tsp salt
1.5 cups warm water
Recipe
In a large bowl put 1/1/2 cups warm water
Add yeast
Let sit 5 minutes
Add salt
Mix it all up. You can add some flour if too wet.
I usually leave it wet, if so, and add more flour later.
Cover and let rest for 2-3 hours. It’s usually good in about 2 hours. I’ve left it a LOT longer and even then it came out bread.
If the room is a bit cold, I’ll turn the oven on for a minute or two and put the covered dough in there.
Remove from the oven if there and preheat oven to 460 with crockpot in. You want the pot to heat up.
One recipe I had said to stretch and fold at half way mark. You can do this if you want. I do this while the oven heats up. Our oven takes forever so it works.
Put dough on floured surface and stretch and fold several times.
I then flatten it and add cranberries and walnuts. Crush the nuts.
Fold it and add some more.
Tuck bread under itself to form a tight ball.
I place on parchment paper and when oven is ready, I use the paper to lift the dough into the crockpot.
Sometimes I remember to score it.
Bake covered for 30 minutes
Bake uncovered for 12 minutes
Let cool for 30 minutes
